Salsa

There's been four dark, cold, rainey days here in Texas, and I'm getting home sick.  Time to go to the QC and plan the garden.   Actually my father's garden.   Sis and her husband CEO put it in so Dad can watch it grow and brag how wonderful it is.   Come August there will be more tomatoes than any of us ever know what to do with.   I find I turn my surplus into salsa.   So as I sit in Texas, pine for Illinois, and dream of August gardens, tell me your favorite salsa recipe.  It just might impact  what we plant this year.

Cilantro Cilantro Cilantro!

And for a sweet salsa I've had peaches in one salsa and shredded carrot in another. Sounds weird, but its good.

Peaches, I like peaches. Carrots I might have thought of, but not peaches, sounds lovely.

My son is the salsa king in our family. He doesn't use a real recipe. Whatever pepper he can get his hands on goes in it. After dicing and draining tomatoes, he uses jalapano, habanara, banana, red, green and chilie peppers. To that he adds red onion, a good amount of fresh garlic (we love garlic) cilantro and instead of white he tried Balsamic vinegar. Seemed to add a "rich" flavor to it. He just throws it together, and after lots of taste testing, he'll call it done. It may never be the same every year, but it's always good!
